Wine is one of the three drinks that is very popular in the world for its useful properties, aroma and mild taste.
The process of wine production is complex and long, it consists of several stages. The main stages are: crushing of grapes, fermentation, filtration, clarification, disinfection, packaging. In traditional filtration, clarification and disinfection, diatomite, paper and a press filter are usually used, as well as a centrifuge as the main equipment for processing fermented wine. As a result of this processing, not only clarification and filtration are ineffective, but also the nutritional properties and aroma of the wine deteriorate, which leads to low quality and high cost of products and involves the expenditure of a large amount of resources.
Ceramic membrane has been widely used for decades for clarification and concentration in food and beverages due to its many advantages than a traditional filter. A new method of processing wine using ceramic membranes has been developed. Clarification using a ceramic membrane demonstrates the good quality of the filtered product due to the preservation of the original nutrients and aroma, and also makes the whole process simple and economical.
