For the production of ethanol from grain raw materials, specially adapted yeast is used, which can withstand high alcohol concentrations (up to 20% vol.), low pH (a necessary component to prevent the development of pathogenic microflora), relatively high temperatures of the medium where the fermentation process takes place.
Wort from grain raw materials usually contains a sufficient amount of nutrients necessary for the vital activity of the yeast cell. Sugar formed after the action of enzyme preparations (alpha- and glucoamylase) is used by yeast to produce: a sufficient number of yeast cells, ethanol and related impurities, carbon dioxide.
