To break down grain starch into fermentable sugars, enzyme preparations of microbial origin are consistently used: a-amylase and glucoamylase. These enzyme preparations are fed by special pumps into the pipelines through which the process fluids move. The pump capacity is determined by the amount of enzyme preparation that must be supplied per unit time (calculated from the amount of tonne of conditional starch introduced into production per unit time).
